Harvested in the Taman Shan peak in Taiwan, this tea is soft, gentle, and calming. The scent is like brown sugar, with more fruity notes showing up as it evaporates off the bottom of the cup. Clean and penetrating, rising straight from the nose to the top of the head.
1 tsp per 8oz of water, 195 degrees, 3-4 minutes.
Fill the pot 1/5 full of dry leaf, add 195° F water and allow to stand for 60 seconds before decanting and drinking. The second brew should steep for 20 seconds, the third for 45 seconds, the fourth for 1 minute 20 seconds, and the fifth for 2 minutes 20 seconds.
