Jin Die: This tea, from Hunan Province, is made solely from rolled golden-hued buds. The result is a silky and aromatic liquor. Rich aromas and mild spices go well with subtle vegetal notes of corn, tomato, and artichoke hearts to create a wonderfully balanced tea.
Bai Hao Yin Zhen: This white tea consists purely of unfurled leaf buds. The lively and silky liquor fills the palate with fruity and vegetal fragrances. Long and delicate, its finish is flowery and refreshing.
Bai Ya Qi Lan: This sweet and creamy tea from Dadong Mountain in Fujian Province has a refreshing, smooth, and brisk mouthful. The flavor profile is creamy with hints of toastiness and sweet potato.
Jin Die: 1 tsp per 8oz of water, 195°F, 3-4 minutes.
Bai Hao Yin Zhen: 1 tsp per 8oz of water, 170°F, 2-3 minutes.
Bai Ya Qi Lan – Gongfu brewing: 5g at 212°F for 30 seconds, add 10 seconds for successive infusions. 5-7 infusions.
